What a Day!
I got the most wonderful surprise this morning! I can't tell you what it is, it's a secret, but I've been heart-smiling from ear to ear since I got it. Don't ever let anyone tell you angels aren't real. <3
The sun is shining. I got quite a bit done this morning, first thing. Still have to write my shopping list so I can go this afternoon or early evening. It's a doozey of a list because I have to include post-Days of Unleavened replacements, baking I'm doing for a dear friend who as asked to back 50 dozen cookies for her granddaughter's wedding. I thought if I can do ten dozen for her it will help. And I'm having a colonoscopy on Tuesday and my prep starts tomorrow so I need to add three days worth of low-fiber diet (the very antithesis of the way I eat!) to my list. I'm planning to keep it really simple. Same with the cookies: sugar and shortbread.
Yesterday I saw a little squirrel who had lost half its tail. Poor thing. I don't know how that happened, unless it got frozen. How will it make it through the winter? My heart is broken a little. Haven't seen it today, yet, but in truth I haven't been paying too much attention. They come and they eat the sunflower seeds I put out for them, then they go. :-)

Yes! Looks pretty tight. I'm glad I'll be out when the final votes come in--I can't take the pressure. ;-)

I was on the phone with the colonoscopy people double checking on the schedule, etc., for all the fuss and bother this afternoon before doing my shopping list...

It was a nerve-wracking vote, and now there's a nerve-wracking follow-up. :O
I think 10 dozen cookies would exhaust me, but I see you're making them bite-sized, so that will help reduce the actual batches of batter and the number of sheets to bake.
Sit down (or lie down) while you're waiting for the timer-- that should help. :)

My plan is to make the batter on Thursday, let them cool overnight in the fridge then bake them Friday morning. I'll give them to my friend on Saturday at church and she can freeze them when she gets them home. Poor woman!
